I am trying some new healthier not ridiculously horrible for you meals. This one I came up with because I absolutely LOVE spicy food and blackened anything. And I also love gyros especially for their tzatziki sauce. Usually they have cucumber but i didn’t have any on hand. If you want to shred up half a cucumber and add it to the sauce it will give it more of the greek cucumber sauce taste…..


2 Chicken Thighs, skinned, boneless

Blackening Seasoning (I use cajun seasoning i bought at Marshalls plus some garlic powder, black pepper, salt, paprika)

1 Tbsp Olive Oil



1/4 cup of Sour Cream

2 cloves Garlic pressed

1 Tbsp Cilantro chopped

1 tbsp Lime juice

1 tbsp lemon juice


Pico De Gallo:

Tomato chopped

Red onion Chopped

Jalapeno Chopped (to taste, more seeds for hotness)

Lime Juice to taste

Cilantro to taste


Coat Chicken in Blackening seasoning and saute 2 min on each side in olive oil skillet on medium heat

Place on wire rack in oven at 350 for 20 min

Remove and top with dollop of Tzatziki sauce and Pico De Gallo.


I served with some sweet potato fries for a deliciously easy weeknight meal!
